Marinades

 
Red Wine Marinade
 
(For beef and venison)
 
2 cups dry red wine
1/2 cup red wine vinegar
1/4 cup oil, preferably olive or another type of flavorful oil that complements your recipe.
10 to 12 fresh sage leaves or
2 teaspoons dried sage
2 garlic cloves, minced
 
 
Combine the ingredients in a food processor or blender. The marinade is best the day its made.

Cider Soak
 
Great for pork, duck and game birds
 
1 1/2 cup cider vinegar
3/4 cup cider vinegar
1/2 medium onion, minced
3  tablespoons oil (preferably canola or corn)
1 1/2 tablespoons Worcestershire sauce
1  teaspoon ground cinnamon
1  teaspoon dried thyme
 
 
Combine the ingredients in a food processor or blender. The marinade can be refrigerated for several days.
