Chicken Fajitas and Lemon Fish w/ Herb Rice

Chicken Fajitas
 
Marinating Time: 30 min. - Prep Time: 5 min. - Cook Time: 15 min.
 
Ingredients:
1/4 cup Italian salad dressing
6 boneless chicken breast halves
1 can (10 3/4 oz.) Campbell's® Condensed Cheddar Cheese Soup
1/2 cup Pace® Chunky Salsa
12 flour tortillas (8''), warmed
4 green onions, thinly sliced
1 small avocado, peeled, seeded and sliced (optional)


Directions:
POUR dressing into shallow nonmetallic dish. Add chicken and turn to coat. Cover and refrigerate 30 min., turning occasionally. Remove chicken from marinade. Discard marinade.
GRILL or broil chicken 15 min. or until done, turning once.
MIX soup and salsa in saucepan. Heat through.
SLICE chicken into thin strips and place down center of each tortilla. Top with onions, avocado and soup mixture. Fold tortilla around filling. Makes 12 fajitas.

Remember this marinade when you're serving grilled chicken or pork chops. Chicken can be placed in marinade and refrigerated overnight, if that suits your schedule.

Lemon Fish with Herb Rice
Prep Time: 5 min. - Bake Time: 30 min
 
Ingredients:
1 pkg. (20 oz.) Campbell's® Supper Bakes™ Lemon Chicken with Herb Rice (includes seasoning, rice, baking sauce, crumb topping)
2 1/2 cups hot water
2 tbsp. butter OR margarine, cut up
1 lb. fresh fish fillets
 
Directions:
PREHEAT oven to 375°F.
MIX seasoning, hot water, butter and rice in 13"x9"x2" baking dish. Top with fish.
POUR baking sauce over fish. Sprinkle fish with crumb topping.
BAKE 30 min. or until done. Stir rice before serving. Serves 4.

TIP: To prepare in skillet: Use same ingredients as oven version, but mix seasoning, hot water, butter and rice in large skillet. Top with fish. Pour baking sauce over fish. Heat to a boil. Cover and cook over low heat 20 min. or until fish is done. Sprinkle fish with crumb topping. Simmer, uncovered, 5 min. or until rice is done. Stir rice before serving.
To prepare in microwave: Use same ingredients as oven version, but mix seasoning, hot water, butter and rice in 3-qt. microwavable casserole. Top with fish in a single layer. Pour baking sauce over fish. Cover. Microwave on HIGH 20 to 22 min. or until done. Let stand 5 min. in microwave oven. Sprinkle fish with crumb topping. Stir rice before serving.
If using frozen fish fillets, thaw thoroughly in the refrigerator; pat dry with paper towels
