Rice Dishes

 

Red Rice
 
1     Can tomato paste
1-1/2 to 2 cans water
2     Onions, finely chopped
2     Teaspoons salt
3     Cups raw rice
3     Teaspoons sugar
4-5  Strips bacon (cooked)
8     Tablespoons bacon grease
Pepper to taste
 
Fry bacon, remove from pan.
Saute the onion in grease from bacon.
Add tomato paste, water, salt, sugar and pepper.
Cook uncovered, slowly for about 10 minutes until mixture measures 2 Cups.
Then add it to the rice.
Add the 1/2 cup additional grease.
Steam for 1/2 hour, then add crumbled bacon, stir with a fork.
Cook 30 to 45 mins longer.

Cheese Grits
 
1 Cup Grits
4 Cups Water
1 Stick Margarine
Salt to taste
1/2 Cup cheddar cheese, grated
1  6-Ounce roll garlic cheese
2 Tablespoons Worcestershire Sauce
2 Egg whites, beaten stiff
 
Add salt to boiling water and cook grits covered on low heat until done. (usually about 20-25 minutes). Stir in the margarine, grated cheese, garlic cheese and Worcestershire sauce.
Fold in the stiffly beaten egg whites.
Pour into a buttered casserole dish.
Bake at 350 degrees for about 30 minutes.
 
Humm Humm good.

Orange Rice

3/4 Cup regular long grain rice
2/3 Cup celery (chopped)
2    Tablespoons onion, chopped
2    Tablespoons melted butter
1    Tablespoon orange peel, grated
1    Teaspoon salt
1    Cup orange juice
1 1/4 Cups water
 
Preheat oven to 350 degrees.
Mix rice, celery, onion, butter, orange peel and salt together and pour into a buttered 1 quart casserole.
Heat orange juice and water together in a sauce pan to boiling.
Add orange juice mixture to casserole and stir.
Cover and bake for about 45 minutes or until rice is fluffy and tender.
