Farmer's Pie
You can use any leftover vegetables. (Peas, green beans, carrots, etc.)
2 tablespoons butter
1/2 cup chopped onions
1 1/2 pounds ground beef
Salt to taste
1 lb can cream corn
1 envelope instant mashed potatoes (Use as much as you would like)
1 egg, lightly beaten
Paprika

- Preheat oven to 325 F.
- Melt butter in skillet; saute onions for 5 minutes, or until transparent. Add beef and cook until meat loses
red color. Season with salt and pepper.
- Turn into 1 1/2 quart casserole; top with corn.
- Prepare potatoes according to package directions. Stir in egg. Spoon potatoes on corn; sprinkle with paprika.
- Bake in preheated oven for 30 to 35 minutes, or until hot and bubbling.
