8 ounces dried kidney beans
1 tablespoon bacon drippings
1 pound ground beef
1 large onion, chopped
2 cloves garlic, crushed
8 ounce can tomato sauce
2 tablespoons chili powder
Salt to taste
- Put beans in Dutch oven or large heavy saucepan. Add water so that the level rises 1 inch above beans. Cover;
simmer for 4 hours, adding water, if necessary.
- Melt bacon drippings in large skillet; saute beef, onion and garlic, stirring frequently, until meat has
lost its red color. Stir in tomato sauce and chili powder; simmer for 10 minutes.
- Add meat mixture to beans; season with salt. Cover; simmer for 30 minutes, stirring frequently.
