Chili Recipes

JailHouse Chili
 
1/2 lb ground beef suet
2 lb diced round steak or ground beef
3 cloves garliic, chopped
3 tablespoons chili powder
1 tablespoon cumin seeds
1 tablespoon white pepper
3 cups water
1 tablespoon paprika
3 diced chili peppers
1 tablespoon salt
1 tablespoon diced sweet pepper
 
  1. Fry out suet in heavy kettle. Discard scraps
  2. Add remaining ingredients. Bring to a boil; cover; simmer for 3 to 4 hours, adding water as needed.

River Chili
 
4 lbs coarsely ground chuck
1 large onion, chopped
2 cloves garlic, crushed
2 tablespoons chili powder
1 teaspoon oregano
2  1-lb cans tomatoes
2 teaspoon salt
1 teaspoon ground cumin
2 cups hot water
 
 
  1. In a large skillet cook meat, onion and garlic until meat hs lost red color, stirring frequently
  2. Add remaining ingredients; mix well.
  3. Cover; simmer for 1 hour

All-Day Chili and Beans
 
 
 
 

8 ounces dried kidney beans
1 tablespoon bacon drippings
1 pound ground beef
1 large onion, chopped
2 cloves garlic, crushed
8 ounce can tomato sauce
2 tablespoons chili powder
Salt to taste
 
  1. Put beans in Dutch oven or large heavy saucepan. Add water so that the level rises 1 inch above beans. Cover; simmer for 4 hours, adding water, if necessary.
  2. Melt bacon drippings in large skillet; saute beef, onion and garlic, stirring frequently, until meat has lost its red color. Stir in tomato sauce and chili powder; simmer for 10 minutes.
  3. Add meat mixture to beans; season with salt. Cover; simmer for 30 minutes, stirring frequently.
