Prune Fritters
1 cup dried prunes
1 egg
1/2 cup milk
1/2 Tsp salt
1/2 cup flour
2 Tsp baking powder
1/2 Tsp soda
4 Tsp butter
1/2 cup chopped pecans
Wash prunes in boiling water. Soak overnight in cold water. Remove stones and cut in quarters.
Beat the egg, add milk, salt, flour sifted with soda and baking powder, melted butter, and
fold in prunes an pecans.
Pour in buttered pan to depth of 1/2 inch.
Bake in moderate oven.
Brush top with powdered sugar, cut into squares, and serve hot.
