Pecan Crisps
 
1 1/2 cup flour
1 cup sugar
3/4 cup shortening
1 egg yolk
2 Tsp milk
1/2 Tsb vanilla
1 unbeaten egg white
1/2 cup chopped pecans
 
Sift together flour, sugar, and salt. Cut in shortening.
Add egg yolk, milk, and vanilla, and mix.
Combine with hands.
Divide into 2 balls and allow to reset a few minutes.
Roll out each ball until very thin between 2 sheets of waxed paper.
Brush with unbeaten egg white.
Sprinkle with chopped pecans.
Pat nuts into dough.
Cut into squares and bake on ungreased sheet about 10 minutes at 375 degrees, until very delicately browned.
