3 lb. catfish steaks or fillets
1 1/2 tbsp. salt
1 c. cornmeal
Sprinkle the catfish with salt and coat with cornmeal. Fry in deep, hot fat until brown, then drain on absorbent
paper.
Swamp Gravy
1 tbsp. cornmeal
3 c. diced potatoes
1 c. diced onion
1 No. 2 can tomatoes
1 can tomato juice
1 tsp. salt
1 tsp. pepper
Pour 1/2 cup fat into a saucepan. Add the cornmeal, potatoes and onion and cook until tender. Add remaining
ingredients and cook, stirring frequently, until thickened. Serve with the catfish.
