Hoe Cakes
1 c. white cornmeal
1/2 tsp. salt
Mix the cornmeal and salt in a bowl.
Add enough boiling water, stiring constantly, until mixture resembles soft biscuit dough.
Drop by spoonfuls into small amount of hot fat in a skillet and cook until brown.
Turn and cook until brown, adding fat, if needed.
Serve hot.
2-3 servings.
